I just love growing a garden. In Colorado we only have a short period of time to grow, but when it does, it just explodes! When we got back from our trip to Meeker and the Western Slope, Britton and I went to go check on our garden in the greenhouse and side of the house. We found some HUGE cucumbers, a big ol’ patty pan squash a few peppers and a bunch of cherry tomatoes.
So I put together a quick snack with some of the tomatoes and cucumbers. I just cut them up and added some vinegar and a small amount of olive oil. I sprinkled them with salt and pepper.
Then for breakfast the next morning, I made a salsa with the tomatoes and peppers to add to our scrambled egg breakfast! Here is the recipe, it tastes soo good!
Cherry tomatoes chopped into halves or quarters
Minced Cilantro
Freshly squeezed lime juice
Sprinkle of salt
Peppers (I also like and added a jalapeno)
Garlic clove minced
Tiniest amount of minced red onion (I am not a fan of onions, but the sweet red ones add just a dab of extra flavor I like)
Add them all together and mix well. Then put in the freezer for about 5 minutes to soak the flavors in really good while you finish up cooking your breakfast. Serve with scrambled eggs or later eat with chips! It is so good and fresh. I am surprised more people don’t have gardens. It’s the freshest, healthiest way to get your food and you get a little exercise when you’re out there tending to it as well!




I live in a 3rd floor apartment right now, but growing a garden is definitely on my bucket list for when we buy a house. I especially want tomatoes…mhm…
Everything you made looks so fresh and delicious! Yum! What do you plan to do with your pattypan squash? I’ve been meaning to give those a try.
We just roasted the patty pan with some zucchinis from my mom’s garden, but I have some more that are growing right now. I think I may try a recipe for stuffed patty pans. I’ll let you know how that goes once they mature and I harvest and cook them!
Alex, you can always start with some herbs in the apt or if you have a balcony, you can do tomatoes in a pot! We have all sorts of plants inside our house (and lots outside as well)!
