The other day I got a hankering for some Waldorf salad which is strange because I rarely eat it. I know that some versions use a lot of mayonnaise as the cream base, so I was looking for a healthy version (and is partly the reason I avoid all these cream salads). I don’t know exactly where the recipe went, but here it is approximately:
1/2 cup fat free plain Greek yogurt
1 tablespoon mayo
black pepper to taste
lemon zest and lemon juice to taste (about 1/2 a lemon)
Mix all of these together.
Then the main veggie ingredients mixed in can vary. What I added were:
chopped celery stick
chopped pear
chopped grannysmith apple
dried cranberries
whole green seedless grapes
walnuts
Mix all of these into the yogurt cream mixture. Serve on top of some lettuce leaves (we used romaine lettuce). Any extra, make sure to refrigerate!
It was so good! It had just enough fat and protein that we just ate it for lunch! Try it!
