For this week’s What I Ate Wednesday, I thought I would go over the differences between my work week food schedule and my weekend eats. During the work week, I generally have something light for breakfast like a boiled egg and fruit or a string cheese and fruit. Then for lunch I make my sandwich or small burrito or sometimes a quick mini-omelette. And for dinner, Britton and I cook up something (or we occasionally go out if we are low on food or ideas).
But on the weekend, we LOVE our brunch. We usually will sleep in, take a shower and then around 10 or 11 start making breakfast. Sometimes it’s French toast, sometimes waffles, sometimes, like this weekend, it’s eggs and sausage. Of course, no matter what we eat, we add a lot of fruit (or veggies depending).
The sausages are probably the worst food here. They are the Vermont Maple Syrup kind and at 170 calories for 3, you have to watch the number you consume. When we splurge and eat these links, I usually have two and Britton has three. The eggs are from our own backyard hens. We also only brew coffee occasionally on the weekends, so it makes it a real treat. And of course we pile half our plate with fruit. Even so, this meal is only about 300-400 calories, depending on how much fruit you eat. Much better for you than any breakfast restaurant (and soo good!).
While most recommendations state that you should have a fairly consistent diet during the weekends as in the week, if I didn’t have to get ready for work, I would totally eat a brunch meal like this every day and a much lighter lunch/snack. Weekend brunch is my favorite meal of the week!

That looks like an awesome healthy brunch! But oh man, I totally eat differently on the weekends than during the week. It’s so much easier to eat healthy during the week, but I always want to let loose and splurge like crazy on the weekends!
Because I spend more time at home over the weekends, I definitely find myself sneaking more sweet treats! It doesn’t help that I love to bake
