Peaches and (Healthy) Peach Cobbler!

As I mentioned before, we have so many peaches from our front yard peach tree that we don’t know what to do with them all (check them out here!) So for this week’s What I Ate Wednesday, I thought I’d show you what we did with them all!

We have shared a lot of them and eaten even more, but still haven’t been able to get through them. So I looked up a recipe on the internet for a healthy peach cobbler and here’s the recipe I found!

First I cut and added the peaches to the saucepan with the other ingredients such as sugar, corn starch, lots of cinnamon and fresh lemon juice and brought it to a boil.

Then I made the topping of whole wheat flour, a little butter, baking power, milk, a little salt and sugar. I also added crushed almonds and oat bran. I poured the peaches into a glass pan and spooned on the topping. Then I cooked the whole thing for about 25 minutes. I topped it with some fat free vanilla frozen yogurt and Britton and I loved it!

It’s still definitely a treat, but had a lot less sugar and fat than most other peach cobblers. Now go out and enjoy some peaches!
